Healthy Chicken Burrito Bowls

These delicious and healthy burrito bowls are packed with yummy goodness, organic ingredients, and plenty of protein!

There are only a few things that I can eat on repeat, and burrito bowls are totally one of them! Seriously, I could have this for lunch or dinner every damn day and I would never get sick of it. Other foods – meh – I’d need a change!

I really try to eat as clean as possible, so I opt to include as many organic ingredients in this recipe as I can. Regardless, you’re still getting lots of nourishing veggies and plenty of protein in each meal while keeping starchy carbs to a minimum. And did I mention these bowls are mouth-watering delicious?!

Now, first and foremost, you have to have a great bowl to serve this in! If you’re like me, you might mix and mash all of your ingredients together before eating, and no one likes making a massive mess. I snagged these white bowls from Target and they are my go-to for burrito bowls and salads. The width of the bowl and the higher sides allow you to toss around the contents without any spills. You’ll also want to grab a cutting board, a good knife (I love this Hammer Stahl Santoku Knife), a few mixing bowls, and a grill pan before getting started.

To start, place four thin-sliced organic chicken breasts in a bowl and lather them up with Lawry’s Carribean Jerk or Mesquite Marindae. Cover the bowl with plastic wrap and place in the refrigerator for about 30 minutes. Once they’ve had a chance to soak up some flavor, you can toss them into your grill pan and cook them on your stovetop. Sure, you could cook them in a baking dish in the oven, but I love the grill lines and bit of “char” that a grill pan adds to the look and taste. YUM!

Next, it’s time to prepare your “rice”! One of the secrets to this bowl is using riced cauliflower instead of white or brown rice as your base. The amount of cauliflower used in each bowl (I use 5oz per meal) only contains 53KCAL/0F/7C/2P. With a little lime, salt, and cilantro, you have the perfect substitute to rice. I don’t notice the difference in taste, and I’m still left feeling full. I’ll pop two frozen organic riced cauliflower packages in the microwave and set to chopping an entire bundle of fresh cilantro while I wait. Put the contents of each bag into a large mixing bowl, add the chopped cilantro, the juice of 2 limes, a pinch of salt, and stir!

From there, I prepare a fresh salad of black beans, corn, tomato, and red onion. Rinse one 14.5 ounce can of organic black beans and one 14.5 ounce can of organic corn and add them to a mixing bowl. No need to heat! Many cans these days have the tab top for easy opening, but if not, here’s a great can opener to use.

Mexican Salad

Next, chop 2 Roma tomatoes and add them to the bowl also. If you don’t have a great knife to use, chopping tomatoes can turn into a mushy mess, so make sure you’re using a sharp, professional one! Add about 1.5 cups of diced red onion and the juice of 1 lime to the salad and stir. This salad keeps well in the refrigerator for a couple of days, so if you don’t use all of it in your bowls, it’s a great salsa for chips or other dishes.

Cauliflower Rice

Dice up your chicken, snag some Chihuahua cheese and salsa verde, and get ready to layer! This recipe makes four servings, so grab your bowls or a few glass Pyrex containers (food prep!) to portion these out. Start with dividing your cilantro-lime cauliflower rice among the four containers. Next, add your fresh bean and corn salad, diced chicken, a pinch of cheese, and some salsa verde to taste. If I have time, I’ll whip up some fresh guacamole to top it off, but if I’m in a hurry, I’ll snag a Wholly Guacamole 100-Calorie Mini and add it to my bowl.
