Veggie-Packed Chicken Pad Thai

This veggie-packed dish can be made with or without chicken (the sauce is vegan!) and is SO easy to whip up! And, this Saffron Road Pad Thai Simmer Sauce is the perfect mix of sweet with a little heat, so you’ll be able to please everyone at your table.

When I had the opportunity to feature Saffron Road’s Pad Thai Simmer Sauce on my pages, I was stoked! I discovered the brand a couple of weeks back, and have made my own Veggie-Packed Chicken Pad Thai concoction a few times already now! So, collaborating with them was a no-brainer. I’m not a professionally trained chef, so if this is missing any main ingredients to qualify this as traditional Pad Thai, then oh well. But, it’s my spin on it! This dish has PLENTY of veggies packed in, so if you’d like to make it without chicken (to make it vegan!) it will still leave you filled! If you are going the vegan route, you’ll have to check the packaging of whatever type of noodle you buy to verify the ingredients. I used these!

At first it might seem like TOO many veggies, but they cook down, so don’t worry. You’ll have plenty of space in your skillet to add the chicken and noodles later. Just make sure you start with a LARGE skillet! I’ve been using this one for a couple of years now and love the size.

Once the noodles and chicken have cooked, toss them in with the veggies, add the sauce packet, and give it a good mix to coat! You can let it simmer for a few minutes to heat the sauce and open up the flavor. Serve it up in your favorite dish (you know I like bigger ones) and add your favorite toppings!

VEGGIE-PACKED CHICKEN PAD THAI

Ingredients:
1 lbs Boneless Skinless Chicken Breast, Cubed
1 Red Pepper, Roughly Chopped
1 Orange Pepper, Roughly Chopped
8 oz Baby Bella Mushrooms, Sliced
2 Medium Zucchini, Sliced
2 TBSP Minced Garlic
Olive Oil
Salt + Pepper to Taste
3 oz Lo Mein Noodles (when dry - about 1/4 of a package), Cooked

Toppings:
Diced green onions and toasted sesame seeds are our favorites! You might also want to add crunchy shredded carrots, toasted peanuts, roasted cashews, or fresh chopped cilantro. Don’t forget to add these to your shopping list!

Directions:
Cook Lo Mein noodles according to package directions. Rinse in a colander and set aside.
Add the diced chicken to a small skillet, season with salt and pepper to taste, drizzle lightly with olive oil, and cook on medium-high heat until cooked through. While the chicken is cooking, add the red pepper, orange pepper, mushrooms, zucchini, and garlic to a large skillet. Drizzle with olive oil and put on medium-high heat. Cook vegetables through until peppers are soft and mushrooms are caramelized. Next, add the cooked chicken and Lo Mein noodles to the large skillet with the vegetables, along with the contents of the Saffron Road Pad Thai Simmer Sauce packet. Toss all contents together with tongs and simmer on low heat for 5 minutes. Serve immediately with your favorite toppings!
